Wooden chopping boards are better for your knives, food, and personal health, but a solid slab of Chamaecyparis obtusa, aka hinoki (aka Japanese cypress), is extra special. The soft wood prevents damage to sharp blades and is resistant to rot and decay. It also has a surprisingly pleasant aroma, should you care about such things.
Because hinoki is relatively soft, it can mark or scar easily, so it’s best to avoid heavy-duty cleavers or serrated knives. Rinse the board with warm water and dry thoroughly after use. Never soak, or put it in the dishwasher – you won’t forgive yourself.
